Cookie Explosion Recipe with Jack's

Cookie Explosion Hot Cookie Dough Recipe


We've all become master bakers in lockdown right? 
All this spare time and lack of being able to eat out has made everyone a lot more creative in the kitchen whether they're cooking a 3 course meal or baking some sweet treats - chances are your social media is now full of absolute culinary experts who will give Jamie Oliver a run for his money. 

But that's all we see isn't it? The perfections and successes when in reality it doesn't always work out like that so here we are. This was going to be a wonderful cookie recipe reminiscent of those big chunky ones you can buy from specialist cookie shops.

Instead it's a cookie explosion - this is a nice fancy way of saying it went wrong! But we make the best of a bad situation and it still tastes damn delicious

So before we dive into the recipe for my masterful creation, let's talk about the ingredients. I've been working with Jack's who offer great tasting food at low prices, they're part of the Tesco family and pride themselves on having overwhelmingly British produce.

I managed to do a full shop for the week at under £50 with a few extra treats to make my cookies (or one giant explosion). The products are fresh and while there isn't a huge array of branded products, there are excellent own-brand items that taste just as good.

Times are difficult right now, and most people are seeing finances needing to be stretched a little further so using a supermarket such as Jack's sees your money stretch a little further. Plus they still have lots of excellent deals and multi-buy options. We bought a Takeaway deal of 2 big pizzas, a side and a dessert for £10 which is a fraction of what we'd spend on a takeaway!

Now onto my recipe... as I said this was meant for cookies, but we've seen some deep dish cookie bars we thought we'd try. I think I took it out of the oven too quick but it turned into a delicious warm cookie dough that would go perfect with ice cream

Ingredients

  • 125g Butter
  • 100g Brown Sugar
  • 75g Granulated Sugar
  • 1 Egg
  • 1tsp Vanilla Extract
  • 300g Plain Flour
  • 1tsp Baking Powder
  • ½tsp Bicarbonate of Soda
  • ½tsp Salt
  • 100g Dark Chocolate Chips
  • 100g Milk Chocolate Chips
  • 100g White Chocolate Chips

Instructions

  1. Cream the butter, brown sugar and granulated sugar until smooth and creamy
  2. Beat in the egg and vanilla extract
  3. Add in the plain flour, baking powder, bicarbonate of soda and salt and combine until you have a good dough texture
  4. Add in all your chocolate chips and give a good mix through to make sure they're easily distributed
  5. Now it's up to you. If you wanted individual cookies then make balls of dough and cook for 10 - 12 minutes at 180

  6. If however you think my accident looks delicious and you too want a cookie explosion then spread your dough out into a lined baking tin so they'll be easier to take out
  7. Place into the oven for 16 minutes at 180

  8. After you've taken the cookie dough out, leave to harden for 15 minutes
  9. Now take a scoop and pop into a bowl with a dollop of vanilla ice cream and voila, warm cookie dough and ice cream
If your cookie slab has gone completely cool pop your bowl in the microwave for 15 seconds to get it nice and warm again

So there we go, a recipe created using ingredients from Jacks, showing that my money can stretch further. That didn't quite go to plan but we made the best of the delicious cookie dough anyway. Could it have typified lockdown any more?
